Chocolate stays at its best when it avoids temperatures high enough to cause it to melt. When allowed to warm it may "bloom" -- that is when the oils and/or sugar collect on the surface. While bloomed chocolate can still be eaten and the taste should be good, it may be unattractive and the mouth feel may be off. When chocolate reaches a high temperature it may go out of temper, losing the crystaline structure that keeps it firm. To help our chocolate reach our customers in the best condition possible we ship in boxes lined with mylar insulation and include ice gel packs. We must include the cost of insulation and gel packs in the shipping and handling charge. We cannot be responsible for any problems that might result from delays or exposure to high temperatures during shipping. We ship primarily by FedEx 2nd Day Air. Its cost is only slightly higher than USPS Priority Mail and the 2nd Day Air has a better record for on time delivery. We normally ship on Monday and Tuesday before 10:00 am to reduce the risk of a weekend delaying delivery. We need at least 24 hours to prepare an order for shipment.
We recommend that you refrigerate chocolate on receipt and to store it in a cool space. While the flavor is best when the chocolate is room temperature, contrary to some opinions it stores well in a refrigerator. Some people even freeze chocolate and then allow it to warm slowly before eating.
